Mexican themed dinner party’s are popular with my circle of friends. We can all find something we like from taco’s, enchiladas, salsa to guacamole and chips. The added bonus is that many Mexican dishes are either already Paleo approved or can easily be adapted to Paleo. A good fit for me, but what about a Mexican themed dessert? Enter these scrumpious Salted Mexican Chocolate Clusters!
Let me preface that these yummy clusters do contain cane sugar which is not Paleo approved. They are however dairy free, gluten free and soy free making it a much healthier alternative than most chocolate desserts. I made these for a Cinco De Mayo party last weekend and they were a hit for my non paleo eating friends. I ate more than my share myself!

Salted Mexican Chocolate Clusters
1 and 1/4 cup Enjoy Life Semi Sweet Chocolate Chips (find it here)
1 cup raw organic almonds (find it here)
1 cup organic Goji berries (find it here)
1 tsp organic smoked paprika (find it here)
Pinch organic cayenne pepper (find it here)
1 tsp organic cinnamon (find it here)
1/2 tsp Pink Himalayan Salt (find it here)
Line a rimmed baking sheet with parchment or wax paper.
Melt chocolate chips in a microwave-safe bowl and heat in 30 second intervals, stirring between intervals until melted
Place the melted chocolate chips and the rest of the ingredients in a bowl and mix to combine.
Using a large spoon, scoop up some of the mixture and place it on the lined baking sheet. Use your fingers to form it into a round shape.
Repeat with the rest of the mixture until you have 20 round clusters.
Lightly sprinkle salt on each cluster.
Put baking sheet in freezer until clusters are firm, about 30 minutes.
Store the clusters in the fridge for up to 2 weeks.
