So you might say Hippie, whats up with all the raw dessert recipes? Simply put, they are easy, quick and delicious! This Paleo Raw Almond Bars recipe is no exception. When I started this blog I wanted to provide uncomplicated recipes for the average bear like me to prepare. Baking Paleo treats without grain flours can be a bit tricky and although I’m mastering the art of Paleo baking I still prefer the simplicity and taste of raw desserts.

Paleo Raw Almond Bars-Grain, Dairy and Soy Free
Almond Butter Layer
1 cup unsalted almond butter (find it here)
1/4 cup + 2 Tablespoons Pure Dark Amber Maple Syrup (find it here)
1/2 cup almond flour (find it here)
1 cup Enjoy Life chocolate chips (find it here)
1/3 cup unsalted almond butter (find it here)
1 cup Sea Salted Almonds (find it here)
Line 8 x 8 baking pan with parchment or wax paper
In mixing bowl combine 1 cup almond butter, syrup and almond flour. Mix until smooth with a hand mixer (find one here)
Pour mixture into lined pan and spread evenly
Add remainder of almond butter and chocolate chips to a microwave safe bowl and heat until smooth and melted in 15 second intervals.
Pour chocolate layer over almond butter layer and spread evenly.
Add salted almonds on top of chocolate and gently press them into the chocolate to set
Freeze bars for at least an hour to set
Remove from freezer and cut to desired size. I cut mine into 16 bars
Refrigerate bars for up to 2 weeks but seriously doubt they will last that long or you can freeze them up to 2 months.
