I am taking full advantage of the sweet and fresh berries that are in season now with this Fresh Berry Tart with Coconut Cream Filling recipe. It’s super easy to make and looks great too! I’ll be serving this at our next summer gathering!

Fresh Berry Tart with Coconut Cream Filling
Yield 8 slices
2 cups raw walnuts (find it here)
3/4 cup organic pitted dates (find it here)
Pinch Sea Salt
Coconut Cream Filling
2 cans full fat coconut milk (refrigerated overnight)
4 cups fresh berries (strawberries, raspberries, blueberries, blackberries)
Add walnuts to blender and blend until walnuts are very fine.
Add the dates and sea salt and blend until it makes a dough
Press mixture into a 9" pie pan
Scoop out only the solid portion of the canned coconut milk into a bowl, careful not to let any of the liquid portion into the solids. The liquid will make your cream runny and will not set up. You can use the liquid coconut milk in your smoothies, coffee or whatever.
Add the vanilla creme stevia or the vanilla extract and maple syrup to the cream and whisk all together.
Pour cream filling over crust
Pile on the berries
Refrigerate 2 hours or more to set
It's important that you refrigerate the coconut milk for 24 hours so the solids and liquid milk have sufficient time to separate.
