I share Caribou Coffee’s values when they say “Life is short, Stay awake for it!” I love coffee and I especially like it with this Dairy Free French Vanilla Coffee Creamer-Paleo recipe. Unfortunately most of the great tasting commercial creamers found at the local grocer have tons of sugar and additives I can’t pronounce. My philosophy is if I can’t pronounce it, I shouldn’t be eating it. I’ve been working on a good Paleo friendly, dairy free coffee creamer for a while now and this is the first recipe I consider blog worthy and proud to share!
Dates are the secret ingredient in this recipe as in so many of my sweet treats. The key to sweetening with dates is soaking them in hot water until soft and using a high-powered food processor. I’ve burned up several food processors because dates are very dense and require a lot of power to process so make sure you use a good quality processor. Dairy Free French Vanilla Coffee Creamer-Paleo
2 cups light coconut milk (find it here)
1 cups almond milk (find it here)
1 cup organic dates (find it here)
1 Tablespoon pure Vanilla extract
1 Tablespoon Hazelnut extract (find it here)
1/2 cup hot water
Soak dates in hot water for several minutes to soften, then drain
Process dates and 1/2 cup hot water in high powered food processor until a paste forms
Add the coconut milk, almond milk and extracts to processor and process again until blended well
Strain mixture through a mesh strainer to remove any bits of date
Store cream in air tight container and refrigerate up to a week.
